While it had an arguably rough start, Fallout 76 has made a name for itself since its beginning. It may not be everyone's favorite game in the Fallout series, but it is a great post-apocalyptic RPG experience for friends.
With plenty of weapons, an ever-growing map, and lots of adventures to go on, you won't get bored with Fallout 76 quickly. It's fairly simple to get a handle on, but also has enough for veteran Fallout and RPG fans.

Baldur's Gate 3 has plenty of accolades, especially where the RPG and D&D communities are concerned. While it is a must-play RPG that allows for co-op, it isn't as seamless when compared to some of the other entries.
The co-op really shines in combat, but in exploration, and especially dialogue, it can feel sort of clunky at times. It's still a great adventure, and one that is made better by friends, but it does have its ups and downs.
This has been patched here and there, especially where dialogue is concerned, by various updates, but it does still get clunky from time to time.

Fighting a horde of demons led by the daughter of Mephisto is quite the task. Thankfully though, Diablo 4 allows you and your friends to enter into Sanctuary to help fight back the hellish army (and it's far easier that way too).
Diablo 4 is also one of the few major games in modern years with seamless couch co-op, which is great for those with friends, roommates, or partners who don't want to deal with multiple consoles or platforms.

Fighting The Root across multiple planes of existence is something that's easier done with friends. Mixing FPS and RPG elements, Remnant 2 is all about combat, and while it may not be a squad-based shooter per se, playing with friends does make it more fun too.
The enemies are varied, and the challenges are just difficult enough to keep you coming back for more. On top of that, there is plenty of customization, quests, and various loot drops to keep everyone entertained for some time in this often dark RPG with an impressive amount of gunplay thrown in.

Depending on your party size, you and your friends can enter into various dungeons and fight those allied to Bahamut, or parties of eight can get involved in more dungeons, trials, and even some raids from time to time. It's an interesting world with plenty of lore to explore.
